Honeycake or Medivnik

Here’s the first addition to our ethnonutrition recipes.

Honeycake or Medivnik
Enjoy this delicious Ukrainian tradition. Enjoy the aroma!
Ingredients:
- 2 cups Pure Honey
- 2 cups Unbleached Flour
- 3 Fresh Eggs
- 1/4 Tsp. Baking Soda
- 1/4 Tsp. Vanilla
- 1/4 Tsp. Cinnamon
Steps:
- Preheat your oven to 350 degrees.
- Beat eggs and add honey and vanilla.
- Whisk in flour, baking soda, and cinnamon.
- Knead mixture into dough and transfer to lightly greased loaf pan.
- Bake on center rack for about 1 hour or when toothpick comes clean when inserted in the center.
